Curry in a Hurry - an easy chicken dish

I’m going to go ahead and say it…sometimes I secretly think salsa should have its very own food group - I love the stuff that much! Using salsa in recipes is a wonderful (and easy) way to bring life to an otherwise ordinary dish. I’ll admit, this recipe was one of those ‘fire it together and see what happens’ kitchen moments. With one too many jars of opened salsa in my fridge (like I said before; I may have a slight salsa problem), I was looking to prepare something quick, featuring salsa. I’m happy to say what turned out was not only easy-peasy to prepare, but it also tasted delish (win-win)!

As you can see from the picture above, this recipe is a saucy one. It made sense to plate the chicken on a bed of rice, so the rice could absorb all the lovely curried salsa flavours. I chose basmati rice that has a sweet nutty flavour all on it’s own and was the perfect pairing. To balance out my plate, I added a hearty pre-packaged kale salad for some easy greens on the side. As mentioned the prep time for this recipe is short, making up for the one hour cook time. I’m a huge fan of one-pot recipes that can be put in the oven, timed and forgotten about, until the oven timer goes off (of course)! I want to spend the majority of my evening interacting with my family, not tending to a fussy recipe (although there’s a time and a place for that too). Curried Salsa Chicken Ingredients 1 cup 250 ml Salsa, medium spicy* 1 cup 250 ml Sour cream, reduced fat 1 tbsp 15 ml Curry powder 1 tsp 15 ml Cumin powder ½ tsp 2 ml Cinnamon, ground 4 pieces 400 g Chicken breasts, skinless ¼ cup 60 ml Cilantro, chopped (optional) Directions 1. Preheat oven to 375°F. 2. Mix together salsa, sour cream, curry powder, cumin and cinnamon in a medium sized bowl. 3. Place chicken breasts in a Dutch oven or casserole dish and evenly pour salsa mixture over chicken. 4. Cover and bake in oven for 45 minutes. Uncover and bake for an additional 15 minutes. 5. To ensure the chicken is cooked thoroughly, insert a meat thermometer into the centre of the thickest piece of chicken. A reading of at least 74°C (165°F) indicates the chicken is cooked perfectly. 6. Remove from oven and garnish with cilantro (optional). *Feel free to choose mild, medium or spicy salsa depending on your heat preferences
